Seasonal Peach and Burrata Salad

Sweet. Creamy. Vibrant. Everything you could in a Summer Salad. Arugula adds a nice sharp bite while balsamic-marinated tomatoes compliment the decadent juicy peaches. Served along side buttery charred bread for dipping, this peach and burrata salad is just perfect.





Ingredients:

  • 1 ripe yellow peach

  • 1 vine ripe tomato

  • 1 burrata ball

  • argula

  • basil

  • 1 french baguette

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • garlic salt

Instructions:

  1. Slice your yellow peach and tomato into wedges.

  2. Toss tomatoes and peaches together in olive oil, balsamic, and garlic salt. Set aside while preparing bread.

  3. Slice the baguette into 1 inch thick slices. Cut on a diagonal angle to create longer pieces. Butter each side of the bread and grill or toast on a pan until lightly charred and crunchy.

  4. Assemble your salad with arugula as the base. Spoon on marinated tomatoes and peaches, draining excess oil. Garnish with basil leaves. Carefully break open the burrata ball, drizzle with remaining oil, and serve with bread!
